A few weeks ago, I was in a chocolate shop called the Rocky Mountain Chocolate Factory with a friend, and she spotted some adorable chocolate coconut egg nests. We immediately asked the cashier for the price, wanting to buy the yummy-looking treats, but unfortunately they cost over $5 each (if I remember correctly). Now I'm sure that it would be worth the price, but we decided that we could figure out how to make our own, and have a fun baking day later that week!
My friend first suggested adding shredded coconut to melted chocolate and hardening it, but we quickly realized that that would form a very hard nest, and we wanted a softer nest. From there, we thought about what kind of a chocolate cookie is full of coconut. And then we realized... macaroons. (Not to be confused with french macarons... I made those here, though)
... And so we searched the internet for a good chocolate macaroon recipe, and got going!
(Sidenote: after making the nests, we went on Pinterest and saw similar cookies everywhere... turns out we're not as original as we thought :p)
